I think what they probably
I think what they probably said was for him to cook vegetables for two reasons: 1) doing so kills any lingering bacteria, and since he's immunosuppressed, he can use all the help he can get in avoiding possibly problem-causing pathogens, and 2) cooked vegetables are more easily digested, and if he's getting chemo he can use all the help he can get in that department too.
Otherwise, many vegetables are highly recommended as part of a cancer patient's diet, by every reputable source i can think of.
